Telephony is transmitting sound between two separate points.

They can be transmitted by wire, fiber, or radio. Then they are reconverted to audible sound once they get to the distinct location. Internet telephony is when the sounds are transmitted through the public internet.
An internet backbone can also be used. Both are interchangeable if need be.
